    < Back Santa Cookies 1 cup (2 sticks) salted butter at room temperature 1/2 cup brown sugar 1 tbsp vanilla extract 1 large egg, at room temperature 2 1/4 cups all-purpose flour 1/4 tsp salt 1 tsp natural red food coloring mini chocolate chips mini red chocolate-coated candies Frosting: 1/2 cup (1 stick) salted butter, at room temperature 4 oz cream cheese, at room temp 1 tsp vanilla extract 2 1/2 cups powdered sugar Preheat oven to 350 F and line two baking sheets with parchment paper. In large mixing bowl, beat butter, sugar and vanilla until light and fluffy. Add egg and beat until combined. Add flour and salt; mix until dough begins to form ball. Remove 1 cup dough and set aside. Add red food coloring to remaining dough. From red cookie dough, make one 1-inch ball and five 1/2-inch balls. From plain cookie dough, make one 3/4-inch ball and five 1/4-inch balls. On prepared baking sheet, place red 1-inch ball and gently flatten until 1/2-inch thick. Attach four red 1/2-inch balls for arms and legs. Attach plain 3/4-inch ball for head and gently flatten until 1/2-inch thick. Attach plain 1/4-inch balls for hands and feet. Shape remaining red 1/2-inch ball into triangle for hat and attach. Repeat with remaining dough, arranging cookies 2 inches apart on baking sheet. Add chocolate candies for eyes and buttons. Bake 12-15 minutes, or until lightly golden. To make frosting: In medium bowl, beat butter and cream cheese until light and fluffy, about 3 minutes. Add vanilla and powdered sugar; mix until combined. To decorate: Place half of frosting in piping bag with small tip to line Santa’s arms and legs. Place other half in second piping bag with small star tip to add Santa’s beard, hat and hands.     < Back Shrimp Risotto 1 lb Wild Caught Texas Shrimp 2 cups arborio rice 1 tsp paprika salt pepper 8 cups broth 2 tbsp butter 1 white onion 3 cloves garlic 1/2 cup dry white wine 1 cup grated Parmesan Italian parsley, for garnish Peel and devein shrimp, leaving tails on. Rinse, pat dry and set aside. Heat oven to 375 F. Season shrimp with paprika, salt and pepper. Drizzle with olive oil then toss to combine. Lay shrimp in single layer on baking sheet and refrigerate. Heat medium saucepan over medium-low heat and add broth. In separate deep, heavy-bottom pot, melt butter. Chop onion and garlic then add to pot and cook until soft and browning. Add arborio rice and stir to incorporate. Cook until fragrant, 1-2 minutes. Add wine and cook, stirring, until alcohol smell evaporates. Add warm broth one ladle at a time, stirring consistently. Do not add another ladle until liquid from previous ladle is mostly soaked up by rice. Risotto has finished cooking when rice is chewy with consistency of thick oatmeal. Roast shrimp until cooked through. Remove risotto from heat and stir in grated Parmesan and chopped parsley. Scoop into bowls and lay roasted shrimp on top. Season with salt and pepper.     < Back Bacon Cheeseburger Popcorn 1 tsp mustard powder 3/4 tsp garlic powder 1/2 tsp onion powder 1/4 tsp salt 1/4 tsp black pepper 6 slices bacon, diced 4 oz ground beef 1 tbsp olive or avacado oil 1/3 cup popcorn kernels (unpopped) 3 tbsp cheese powder 1 tbsp dill pickle powder 1 green onion, thinly sliced In small bowl, whisk mustard powder, garlic powder, onion powder, salt and pepper. Set aside. In large skillet over medium-low heat, cook bacon and ground beef 8-10 minutes, or until fat renders and mixture is golden brown and crispy. Transfer to plate lined with paper towels to drain. Reserve 2 tablespoons bacon fat. In large, heavy-bottomed saucepan over high heat, combine vegetable oil and reserved bacon fat. Add popcorn kernels; stir to coat then spread in even layer. Cover with lid. Shaking saucepan, cook 2-4 minutes, or until popcorn starts to pop, then shake less frequently, at about 2-second intervals, until popping sounds have almost stopped. Remove from heat. Safely open lid. Transfer half the popcorn to large bowl and toss with cheese powder. Toss popcorn in saucepan with dill pickle powder; transfer to large bowl of cheese popcorn. Add bacon mixture and reserved seasoning; toss to combine. Garnish with green onion. Tips: For beefy flavor, sprinkle popped popcorn with 1/4 teaspoon beef bouillon powder or steak spice, if desired.     < Back Loaded Philly Cheesesteak Baked Potato 4 large russet potatoes, washed 1 cup sour cream 1-2 tbsp whole milk 1/4 cup unsalted butter, divided 1 small green bell pepper, thinly sliced 1/2 small yellow onion, thinly sliced kosher salt, to taste freshly ground black pepper, to taste 1 lb fresh shaved sirloin steak 2 cups shredded provolone cheese Preheat oven to 425 F and line baking sheet with aluminum foil. Prick potatoes all over with fork. Bake until potatoes are tender and fork inserted easily comes out, 45 minutes-1 hour. Split tops of potatoes open with knife and fluff potato flesh with fork. Set aside. In small bowl, combine sour cream and milk, adding more milk as needed, until sour cream is pourable. Set aside. In large skillet or on griddle over medium-high heat, heat 1 tablespoon butter. Add peppers and onions; cook until tender, 3-4 minutes. Season with salt and pepper, to taste. Transfer to plate and set aside. Clean skillet then melt remaining butter. Add steak and cook until fully cooked and lightly browned, 3-4 minutes. Season with salt and pepper, to taste. Return vegetables to skillet and toss to combine. Evenly top each potato with 1 tablespoon butter, steak mixture and cheese. Transfer to oven and bake until cheese is melted, 2-3 minutes.     < Back Spiced Pumpkin Bars 2 cups flour 2 tsp baking powder 2 tsp ground cinnamon 1 tsp baking soda 1/4 tsp salt 4 eggs 15 oz can of pumpkin 1 2/3 cups sugar 1 cup cooking oil 3/4 cup chopped pecans (optional) 8 oz pkg cream cheese, softened 1/4 cup butter, softened 1 tsp vanilla 2 cups powdered sugar (sifted) Pecan Halves (optional) In a medium bowl stir together flour, baking powder, cinnamon, baking soda, and salt; set aside. In a large mixing bowl beat together eggs, pumpkin, sugar, and oil on medium speed. Add the flour mixture; beat until well combined. If desired, stir in chopped pecans. Spread batter into an ungreased 15x10x1-inch baking pan. Bake in a 350° F oven for 25 to 30 minutes or until the center comes out clean. Cool completely in pan on a wire rack. In a medium mixing bowl beat together cream cheese, butter, and vanilla until fluffy. Gradually add sifted powdered sugar, beating until smooth. Frost pumpkin bars. If desired, top with pecan halves.
