< Back Pumpkin Crumble 1 can pumpkin 1 can evaporated milk 1 cup brown sugar 2 eggs 1 tablespoon pumpkin spice 1 teaspoon cinnamon 1 box cake mix yellow, white or spice 3/4 cup chopped pecans 3/4 cup chopped white chocolate chips 1 1/2 cups melted butter Whipped Cream: 1 cup heavy whipping cream 2 tablespoons sugar Heat oven to 350 F. In bowl, mix pumpkin, evaporated milk, brown sugar, eggs, pumpkin spice and cinnamon. Pour into greased 9-by-11-inch baking dish. In separate bowl, mix cake mix, pecans and white chocolate chips. < Back Chocolate Covered Pumpkin Pretzels 3/4 cup orange chocolate melts 1 bag (16 oz) mini pretzel twists 1/4 cup mini green coated chocolate candies Line baking sheet with parchment paper and set aside. In medium microwave-safe bowl, melt candy melts 30 seconds then stir. Working in 15-second intervals, continue microwaving until melted and smooth, stirring between intervals. With fork or dipping utensil, dip 36 mini pretzel twists, one at a time, into melted orange chocolate and gently tap side of bowl to remove excess. Lay each covered pretzel on parchment paper. Using remaining pretzel twists, break apart enough to equal 1/4 cup. Place one mini green chocolate candy (to form leaf) and one broken pretzel piece (to form stem) on top of each dipped pretzel. Repeat with remaining pretzels and chocolate candies. Let set until solid. Pretzels can harden on counter about 30 minutes, or placed in refrigerator or freezer 5-10 minutes. < Back Skillet Chili Mac 1 lb ground beef 1 cup chopped onion 1 can (14 oz) crushed tomatoes 1 tbsp chili powder 1 tsp cumin 1/2 tsp salt 2 cups elbow macaroni (8 oz), cooked and drained 1 pkg (2 cups) Mexican mix shredded cheese & divided 1 pkg (2 cups) Sharp cheddar shredded & divided 2 green onions, thinly sliced 2 tbsp chopped cilantro In large skillet over medium heat, cook ground beef and onion 5-7 minutes, or until meat is browned, stirring occasionally. Drain fat, if necessary. Stir in tomatoes, chili powder, cumin and salt. Stir in cooked macaroni; reduce heat to medium-low. Top with cheeses, saving some for topping; cover and cook until cheese is melted. Remove from heat; top with green onions and cilantro. Add final layer of reserved cheeses on top. < Back Tuna Noodle Casserole 6 oz egg noodles 1 cup peas (canned or frozen) 2 cans (5 oz each) light chunk tuna in water, drained 1 can (10 1/2 oz) cream of celery soup 1/2 cup milk 1 1/2 cups shredded cheddar cheese, divided 1/2 tsp celery salt 1/4 tsp black pepper 2 tbsp fresh parsley, chopped, plus additional for garnish (optional) nonstick cooking spray 1/4 cup dry breadcrumbs 2 tbsp butter, melted Parmesan cheese Preheat oven to 350 F and cook egg noodles according to package instructions. In large bowl, mix egg noodles, peas, tuna, soup, milk, 1 1/4 cups cheddar cheese, celery salt, pepper and 2 tablespoons parsley. Spray 9-by-13-inch casserole dish with nonstick cooking spray and add tuna mixture. Cover with aluminum foil and bake 20 minutes until hot and bubbly. While casserole is baking, mix breadcrumbs and melted butter. Remove casserole from oven and top with breadcrumb mixture and remaining cheddar cheese. Bake, uncovered, 5-10 minutes, until breadcrumbs are golden brown and cheese on top is melted. Sprinkle with Parmesan cheese and additional parsley, if desired, before serving.
